Guys- my son and I just threw this together tonight and OMG it was amazing and so easy! Here’s what we did.
What you’ll need..
One pack boneless, skinless chicken thighs (6-8 thighs)
One family size can of Cream of Chicken soup
One regular size can of Cream of Mushroom soup
Half a regular size container sour cream
About two cups shredded cheese (add more or less if you want)
Minute rice- I used 6 servings for this recipie
Broccoli crowns
Chicken broth
Non-stick cooking spray
Garlic and onion powder
Now, let’s make it..
First, make rice as package directs. While that is cooking cut your broccoli crowns into bite size pieces.
Add the soups, sour cream, and cheese to a large mixing bowl. Add cut broccoli. Season with garlic and onion powder and salt and pepper to taste. Mix well.
Make sure you spray your baking dish with nonstick spray. In a large baking dish combine the cooked minute rice, and the broccoli mixture.
Next, nestle your chicken thighs into the mixture. Spoon some of the rice mixture on top of the chicken.

Then, pour enough chicken broth over the entire mixture until the broth is covering most of the chicken. Don’t over fill as the rice will expand and there will be juices from the chicken, but be generous with it.
Bake at 350 degrees for about an hour and fifteen minutes or until the broccoli and chicken are fork tender.
